Every holiday season, one of my favorite things is walking
into our production kitchen and watching an army of
bakers piping tray aer tray of these stunning, simple treats.
Meringue is spiked with a touch of peppermint extract and
then dely piped into little kiss-shaped cookies. e pastry
bag is striped with a touch of red food coloring, which
streams down the sides of the cookies, creating a lovely
striped kiss. Packaged in little plastic bags tied with ribbon,
they will become your go-to holiday gi.
Ingredients:
• 8 large egg whites (about 1 cup / 240 grams),
at room temperature
• 1 cup / 200 grams superfine sugar
• 1 cup / 120 grams confectioners' sugar
• ½ teaspoon kosher salt
• 1 ¼ teaspoons pure peppermint extract
• 1 tablespoon red food coloring gel
