"We grew up literally in it, hands-on in this industry
since we were 10 years old," Demetri Rexinis says of
his decades of experience in the hospitality sector. As
a first-generation American, Rexinis' parents arrived
in America from Greece, with his father
simultaneously learning the language and working
his way up from dishwasher to waiter to eventually,
restaurant owner. By the time Demetri was 17 years
old, his father had purchased Club Abyss with the
intent of having Demetri and his older brother, Kosta,
run the business. "My father risked it all and bet on
us," he recalls. "Knowing we never want to disrespect
the trust and putting it all on the line for us, it's driven
us to who we are. It's what kept us on a straight path;
it drove us to constantly grow, evolve, and run all of
our businesses with that mindset of honesty and
treating people well."
Today, Demetri owns and operates multiple
hospitality businesses across the Garden State,
including three locations of Over Easy Kitchen, e
Gramercy at Lakeside Manor, e Bar in Sayreville,
and most recently, Madison Modern Social. With
such a wide array of establishments with differing
menus, vibes, and experiences, Demetri shares that
"it's important for us to touch on everything, every
age group and all different brands, but all come from
the same DNA–all built on that–hospitality going in
100%." While admitting there is no perfect formula
