While he has remained adaptable to many changes in the hospitality sector over the last 30 years, one area that Demetri holds dear is the importance of maintaining a good name. "My father told me, 'don't ever mess up the last name; all we have is our name,'" explains Demetri. "When you understand that, it goes back to just how you live your life. Being able to look yourself in the mirror, understand that whatever you have, you did, you did it 100%." His commitment to maintaining his family's good standing has taken on an even greater meaning since the passing of his brother, Kosta, in May 2025. "It's never uncomfortable talking about my brother, my best friend," Demetri shares. "I use it as motivation[...]we built these places together, I got to keep it moving. It's a reminder how fast it does go and all we can do is just continue." e loss of his brother and business partner now serves as a daily motivator of Demetri's "obligation that I have to continue what we built for my son, for my beautiful niece," evidence of Demetri's fierce commitment to honor and legacy. As Demetri looks to the future, his focus is not on acquiring "50 more restaurants, it's to hopefully do a good job so my son and my niece are given the same work ethic." While opportunities abound, Demetri remains committed to his current ventures, focusing instead on "teaching the right lessons to these kids and giving them the right tools." As Demetri continues to carry on the mission that he and Kosta set out to do, it is clear that his work ethic and personal values will continue to transform the hospitality industry in New Jersey, cementing the name Rexinis as the benchmark for excellence.
