Comparatively, Chef Laurent acknowledges that "in New York, you can find any product in any season" but cooking in the Hamptons offers "more access to local and seasonal products," changing the way he prepares food in any given season. "In the Hamptons," he explains, "if you shop at the right place, you are only shopping with the seasonal product." In summer, Chef Laurent focuses on grilling and generally prepares lighter, healthier meals. "In the winter," he says, "I cook a lot of stews, winter dishes, and root vegetables." His favorite season in the Hamptons, however, is the fall. "I like every season there, but the fall is great. It's a little bit cold, I put on the fireplace, but you can still go to the farmstand; it's not dead, life is still around," states Chef. Regardless of the season he's in, Chef Laurent cooks for his family "every weekend," planning the menu in advance. He explains, "I know one week to another what I'm going to cook on the weekend. I grew up this way; my grandmother was this way, my mother, it came naturally to plan what we will eat." VUE ON | LIFESTYLE
