His inspiration comes from all different sources, whether that be social media posts, magazine articles, meals in other restaurants, or generally, a craving that he will satiate. "It's all about what I want to eat. is is the way the vibe goes," he explains. "If I want to eat it, I cook it." Chef Laurent mentions his recent favorite, Singapore noodles, is "so easy, but I'm in love with this dish." Experimentation is key for Chef Laurent, and applies to his other creative outlets, food photography and oil painting. Outside of his accomplished culinary career, Chef Laurent is paving a new path with painting, something he "fell in love with." What began as a friend's gi of a few brushes and a blank canvas quickly turned into a dedicated practice. Living in the Hamptons, in close proximity to one of America's most vibrant artistic communities, has only further developed his love for painting. "I can see, I am painting stuff I wasn't able to paint three years ago," he explains, humbly mentioning his most recent public recognition for his work. "I had my first sale last weekend," he shares, with four of his paintings accepted into a local East Hampton exhibition. "It was great; I sold three out of four." While still considering himself a student of the cra, his first sale was an exciting milestone, though he admits to being reluctant to part ways with his work. "I love my paintings so much," he shares. "I don't want to sell them." Whether manning the grill on a summer's evening, scouring the local farm stands and markets for the perfect seasonal ingredients, painting with the sunrise, or sitting seaside aer service, Chef Laurent approaches his life in the Hamptons with the same thoughtful intention that has defined his culinary career.
